Use the "Subscribed" navigation mode by default. And make a habit of subscribing to any community you find interesting.
Then, when you think "I need more content", hop into "All" to see all communities. Most stuff there won't interest you; but when you see something that does interest you, subscribe to that community.
Do this often enough and you'll get a large list of subscriptions, and lots of content, but it'll be mostly content you care about.
There's also Lemmy Explorer that lists around 9k communities.

Is there a reddit-to-lemmy index? I'm in love with r/wunkus, which is a very idiosyncratic reddit sub. Still, I know from learning languages that every culture has its own unique gems.
There used to be one: redditmigration dot com. Apparently it died.
In general you won't find good Fediverse equivalent for smaller subs, due to the smaller population here. You could try to recreate them; !196@lemmy.blahaj.zone for example has rooted itself rather well here. But you could always ask people around.
I checked r/wunkus. It seems to be about animals doing dumb-but-cute stuff? While I know it is not a direct replacement, !aww@sh.itjust.works might scratch the same itch.
