oh yeah... when i was getting fresh wagyu on my last trip.... so good
I feel bad for the cows though, the marbling is cow metabolic syndrome.
I try not to eat it either, prefer just local cows that aren't wagyu. It's costly, too.
I've been doing local beef, which isn't the same genetic line as western beef, and it has a bit more gamey flavor - but I've grown to love it.
I've been meaning to incorporate more lamb into the rotation. A nice local ruminate, goats and lambs everywhere.
