My advice is get a new email and do not forward to it. It can cause a link to your identity later. Make two emails, one for things that send too much spam, and one for serious stuff like doctors and banking. Go find your banking accounts and change the email. Once you confirm the bank emails go to the right place, delete all the emails from them out of old accounts unless you need something for taxes or whatever.
Then be sure to get other stuff you need that you're might forget about. EBay, Steam account, etc and put those in the email where more spam goes. Go through google and cancel subscription that you don't need, and then delete associated emails from that source. It probably takes an hour to get through a few thousand emails. Just keep doing it from time to time until it's done. I absolutely would not forward. That just means they're going to aggregate your info IMO. Also, the info might be there for a while but is less valuable as it ages I bet.
I even made a medium account so proton, the first email I tested, wouldn't forward all my gmail spam.
That's what I'm doing. Someone might have better idea.
