That was mostly the production crew who took a lot of time to use real hacks and UIs to recreate them live.

Multiple major dictionaries seem to define computer hacking as: "to gain unauthorized access to a computer network, system, etc." or something similar. So yeah, it seems that using a password you found somewhere to access an account that isn't yours would indeed be considered "hacking."

Yes. It's also a series of felonies. Having a persons username and password does not give one permission to access the account anymore than having possession of someone's house key allows one to legally enter the home.
