I'd start with either The Original Series or The Next Generation. Paramount released HD versions of both so visually they're in better conditions than some of the other series.
Star Trek: The Original Series - fun in a kind of campy way, it's the original, and only a couple of seasons so it's not a bad place to start. It's episodic so if you hate an episode you can just skip it.
Star Trek:The Next Generation - debatably the best series, kind of a rough start in season 1 (S1E02 is wildly problematic). Back half of the show is great though. Starts off episodic, but the show runs long enough that there is character growth.
Honorable mention to Star Trek: Deep Space Nine. It's my favorite so I'm heavily biased, but it's the best series. It would be great even if it wasn't Star Trek, it's more serialized so you get more character growth and the additional time gets you better stories. I also appreciate the world building it does for the Star Trek universe. That said I think familiarity with Star Trek enhances the show so I wouldn't use it to start someone on Star Trek.
The other shows (Voyager, Enterprise) are not great to fine. Voyager was initially a bunch of TNG scripts they didn't use, should have a serialized but is instead episodic. Enterprise was kind of a product of post 9/11 American trauma and kind of shits on the optimism of previous shows.
As for the new Trek Discovery is fine? Makes some changes to the universe which are controversial.
Star Trek: Strange New Worlds is great though. Casting is solid and the show is kind of a mix of the best parts of TOS and TNG.
