Love me some nachos. But you gotta use a cheese sauce in addition to shredded cheese.
There are times I want cheese sauce and times it is the most disgusting thing.
Do you have buy cheese sauce, or make it? Got any specifics?
I make it. Butter, four, roux, milk. Cheese, cayenne. Takes like 10 minutes. A quarter the cost of yellow colored emulsified soybean oil with cheese flavor.
In San Antonio we do nachos a little differently. We make individually dressed chips.

That's the most traditional method. Takes a lot of time but definitely a superior presentation method where every chip is exactly the same. But I'd have to throw out half a bag of chips to get one plate worth of perfect chips.
That's why chilaquiles is automatically on the breakfast menu the next day.
I love them but domestic tranquility says I can't mess up the kitchen before my wife wakes up and gets her coffee. And she always wakes up after me.
True, could maybe repurpose the broken chips. Mash em up and use them in your outer coating when frying chicken tenders?
My coatings always end up being whatever is around. I used to do beer batter but these days I never have beer in the fridge, so I use near anything. Eggs/buttermilk/ranch/hot sauce... If it's liquid and not just water, I'd probably try it lol
Frying is pretty rare here because deep frying uses a lot of oil. It's not a health issue, it's a cost one.
Yeah I haven't deep fried anything in a while. Years ago I had a deep frier and would sift/clean the oil but even then it was just a pain. Now if I fry something I just use pan and then sift it and use it a second time over the next couple days. I don't make food for more than 2 people though usually. So my pots/pans get to be smaller. I essentially cut/pound out the chicken like cutlets, or make nuggets out of them.
It's sad that chicken thighs cost more than chicken breasts now. Apparently people caught on that they also had a lot of good uses..
Same. Cooking for two and deep frying don't play well together.
Buy the whole chicken. Break it down. Eat for a week.
I really need people to ease up on eating my chicken thighs.

I, personally, like the first way. Mix all the toppings into a dip, dip as you eat. No soggy chips, and no chips left with barely anything on them at the bottom. 😁
I made the bowl prep for my wife. Because she wanted a dip and no sog.

That looks amazing. I'm happy to eat the one in the right fresh out of the oven, but getting in to the soggy chips, I leave it for my partner.
Otherwise, I'm on the left. Also, seven layer dip!!!
