I recently got a Oneplus Watch 3 and I've been looking for any foss apps for wearos. Searching on fdroid doesn't find much, hardly anything in fact.

Can anyone recommend any?

This isn't what you asked for exactly, but there is an app that allows you to easily install any APK, and many "regular" android apps from F-droid work fine on WearOS.

GadgetBridge is a device app to connect with, but I'm guessing you're talking the OS of the actual watch itself? Look up AsteroidOS. https://asteroidos.org/watches/

If that's the case, My Nothing Watch 3 wasn't on the compatible list, but works just fine. It's maybe not on the list bc its not confirmed tested/working, but a lot are probably like that.
