Poly or not - there are exactly two things that make it incredibly hard to get out of Gmail, and one of them is most certainly the advanced calendar sharing features. I have 13 calendars, including the ones shared with family and kids and partners. It's a lot, but it's not more than I really need.
The other one is, how does one migrate email into something imap/smpte given over a decade's worth of emails with more than one label.
Some mail services do an email import. Proton worked for me.
Here’s what I did and it took time. I started forwarding my email to my new account first. I did a Google takeout of my email in case I really screwed something up. Then I went through and deleted about 2 decades worth of emails I didn’t need or want Google’s AI to access: old newsletters, shipping and old purchase confirmations, emails with contacts that were purely logistical or ephemeral, etc. Going to all mail and searching mail from Amazon or other retailers and selecting all to delete. After that I used proton’s import tool. I went through and updated my email on all my services to my new email account or an alias. I use iCloud and proton pass - while I pay, a limited number aliases are available in the free tier of PP). As my final step I created an Vacation Response for my contacts (of which I edited already) with my new emwil address and told close contacts about the change.
My family already uses iPhones so calendar so it was easy to move to iCloud from Google. Yeah, that’s moving from a lion’s den to shark infested waters, but I do enjoy swimming. /lh There may be other services, but I haven’t looked into them yet. Generally though, you can send event invites to any calendar and even with Proton you can share a calendar, though it’s more rudimentary.
Oof, the email thing is also an issue. I’ve tried just moving to a different email client and all of them have performance issues when dealing with my primary account that I started a month or so after Gmail first launched.

Cryptpad looks great for a lot of things but does not appear to have any interoperability with Google Calendar.

Hubzilla has a calendar module with calDAV functionality. Maybe 'gmx' may help with e-mail.
I'm curious too. I think an ideal solution would be one in which you start using a calendar that is compatible with gcal, but I haven't gotten around to looking to replace gcal yet myself.
You should be able to use CalDav to sync your Google Calendar into a different calendar client. Of course, this still means you will be using Google Calendar, but from the comments, it seems you want to stick to it for the time being.
I have a GrapheneOS device (and do not have a Google account in my personal life), however my work uses the Google suite of products, including the calendar. So, I have DAVx⁵ (https://apt.izzysoft.de/fdroid/index/apk/at.bitfire.davdroid) CalDav set up along with Etar (https://f-droid.org/packages/ws.xsoh.etar/) for UI and widget. This works well for me without relying on the official Google Calendar app and Google Play Services.
It’s not so much that I want to keep using it, but I won’t be able to move everyone else over at once so need to be able to keep the sharing working with them. I’ll take a look at CalDav for now. Thanks!
You could look into ZenKit, a project management suite of tools. My wife and I use it as a shared household calendar + shopping list.
