Apart from being ~~delicious~~ edible parsnips are a fiercely invasive species! The sap of their stem also makes the skin so sensitive to the sun that normal exposition results in burns. Furthermore If it enters contact with your eyes you'll go blind! I do like adding one to mashed potatoes for some extra zing.
