If ICE went into the Embassy with aggressive intent, and an Embassy security guard pulled out a gun and took out the threat, what would this be considered?

Technically, ICE is acting in the capacity of a government agent.

I guess the same could be said if ICE crosses into Canada or Mexico (or Italy).

Embassies are considered the sovereign land of the respective nation. ICE has no jurisdiction or power in Ecuador. Killing an ICE agent with aggressive intent in the embassy would be considered a "diplomatic situation", but not against the law.

Trump would throw a fit. Might even do something very rash. But legally it would be their right to use lethal force to protect their sovereign land.

And every other country would be wondering if their consulates were safe if he did anything. It would cost the US dearly, especially if nations we were allied with started pulling their embassies out.

Realistically Trump would threaten Ecuador and or sanction them for killing government employees. 

They’d only use it as an excuse to attack their leaders and try to install their own.

If the US were to to violate the Vienna Convention On Diplomatic Relations this would have extreme consequences for diplomatic relations to all other countries. Even the most backwards shit ass dictatorships honor this convention.

They couldn't parse the sentence "Foreign embassies are sovereign territory", let alone be expected to possess that knowledge to begin with.

So LEGALLY, an embassy is not considered foreign soil. However, attempting to invade one is tantamount to a declaration of war.

Consulates, on the other hand, are not necessarily the same thing and may not enjoy the same level of protection. Your embassy performs the high-level diplomatic shit, but consulates are more for day-to-day stuff (visas, taxes, etc).
