I've been meaning to do a New Vegas replay, but the 2 hour modding process is a big turn off and I am not going to play it without mods (been there, done that, no thank you).

Nexus mods has things called Collections that are packages filled with mods that the collections author can even update and maintain.
So you use vortex, and you can install an entire collection of mods, point and click. It's all auto configured, vortex and collection author work out the order and compatibility.
It's great, you can have 300 mods installed and working without opening a single ini file.
And there are heaps of collections for FNV.
Why not use a mod pack via wabberjack like Viva New Vegas or whatever you prefer and then it is all done for you pretty much.
I don't have patience for spending hours and hours modding and trying to then get the mods to work in a stable fashion so I would never have played New Vegas if it wasn't for things like that!
Wabbajack seems like a nightmare to get functional on Linux, but if I'm wrong please correct me.

2 hour modding process? You speed-running it or something?
Not at all, but I do like to improve the graphics, add minor expansions, combine New Vegas (the in-game city) into a more coherent whole, and add UI/UX improvements and a whole lot more.
Perhaps things are easier these days, but it took a lot of time to make everything work well the last time I replayed New Vegas.
Would definitely highly recommend Viva New Vegas as recommended above! There's an easy mod list that just gets things working, and an expanded list that adds niceties and features.
I'd also recommend Simple Open Strip and Simple Open Freeside, though be aware that quest mods that put NPCs in those locations are very likely to break
Yeah, I know. It took me 2 days to get a working set of mods that didn't break the game last time I tried it. 2 hours is crazy fast.

Enhanced Animations has been recommended as part of Viva New Vegas for a while now.
No idea how simple the Wabbajack setup is, but VNV is the only way to play NV in the modern age.

That is simply not true. VNV is nice but you can enjoy the game without it.
