It sounds like after doing normal science (seeing how they reacted to changing environment or introduction of antibiotics) he realized there was a "language" to the reactions, that he could then play with to elicit different patterns more deterministically. They are colorless too, he used a blue dye and then photoshop to make whatever colors helped highlight the "art".

Quite neat.
