This definitely works too, used to do it this way.
This bread stash is so nice for hot days too, when the last thing you want to do is heating up the oven.
I also like how it makes sticking to not buying bread so much easier as you never run out and can have breaks from the baking.
As a Bread maker and bread enjoyer , this topic interests me, but I don't know any best practices, so just commenting to keep track!
