Nova launcher lets you customize the appearance and home screen further. There are several others on the app lounge, but that's the one I went with. Just for added security, whichever launcher you end up with, block the app's network access. I had one i tried out change hands and the new company was trying to use it to data mine.

I use KISS launcher with e/os (also used it on standard android before) and it works fantastic (KISS follows a different approach than most launchers though so it takes some time to learn and get used to)
Yes, widgets can't be moved around and are placed in the order they were chosen. Yet, all widgets on the home screen, except the search bar and recommendations, can be removed.
Since a while, apps in the app list can be moved and ~~ordered~~ organised according to your wishes.
In addition, if you long press them you can delete them. Once you long press, you can organize them. Like move them to another screen, or drop them in top of eachother to make groups.

Just use a different launcher than e/OS's default launcher. Problem solved.
