Grommets make sense since you'll be staking it, but yeah I'd skip the hem.
Maybe reinforce the corners with some triangles and make It 2 or 3x thick before you put a grommet through them.

I would agree you're probably overthinking it, but a folded hem might be a stronger attachment point for your straps that go out from underneath your tent to link up with your tent poles. I'd put grommets in webbing and attach the webbing to the Tyvek, but I am far from an expert...that's just copying the design of my REI tent and footprint combo.
