As the title asks, what apps are you running?

Also do you have your data on your host machine or on your main storage/NAS?

Last question, is it just my set-up or is NextCloud slow for everyone?

I have a bunch of apps installed because I'm trying them out to see if their viable replacements for Google/Office.

The apps I use tho are: Collabra, Contacts, calendar, notes, deck, and tasks.

Speed-wise I don't think it's slow. It's not winning any races but it's peppy enough. What sluggishness I do encounter I think it's due to my storage (4 spindles in a zraid).

I have a second AIO instance on a VPS backed by B2 block storage I'm experimenting with. That one is, surprisingly, more sluggish. Seems to work well but I haven't really put it though it's paces yet. And I haven't really figured out how I'm going to back it up.
