This is because knobs, switches and buttons are easier to use than touchscreens. I like having carplay/androidauto while still being able to turn a knob or press a button for AC, volume, radio etc.

I have Carplay and I can use my physical rotary knob, back button, etc. In fact, that's what makes it great for me, I get to interact with my phone using the physical controls on my car. Best of both worlds.
