At their physical stores you can go in and spend plenty of time checking out options, the staff are very helpful and have recommendations. I know many people who went in and had this exact experience.

Sidenote: it's hard to ship knives from US sellers because the CBSA definitions of what's prohibited is way more restrictive than actual Canadian law, insane I know. So HoK is kind of the source.
