If you cut the skin off the meat will dry out. You gotta roast 'em at a temperature that renders the fat under the skin making the skin crispy.

Meh, rather starve than eat long pig. Not to mention they should be scared shitless before death, which we all know makes the meat all stringy and tough. No thanks, I'll settle for witnessing the suffering of the monsters.
