Yeah, why not just send the giant eagles to throw them in the volcano

The eagles don't meddle in the trivial doings of mortals. And they don't collect your garbage.

But Bilbo could at least stack them like a sane hobbit.

In the Ring issue, while mortals had become involved, in the grand scope of it all it was a higher beings' matter. Sauron trying to dominate Middle Earth was clearly off the intended path, and Eru Ilúvatar even had to step in at the last minute to ensure success, which was highly unusual. Of course the eagles would help with part of that if a Maiar asked them.
