Not pictured: the soya nuggies I ate with it

I used 2 cups of (dry) elbows

Cashew cheese sauce:

  • 3/4 cup raw (unsoaked) cashews
  • 1 cup + 2 tbsp vegetable broth
  • 2 tbsp nutritional yeast
  • 1 tbsp cornstarch
  • 2 tsp lemon juice
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp liquid smoke
  • 1/4 tsp salt
  • 1/8 tsp turmeric
  • 1 tbsp vegetable oil

3 minutes on the highest setting on a high-speed blender

Stop, scrape the sides, and blend on the highest setting for another 30 seconds.

I pour it over the pasta with about 1/2 cup of the reserved pasta water

Stir it all good

Enjoy
