In the GrapheneOS environment, people usually mention Curve for NFC payments. I haven't used it myself, but it looks a lot more mature than Walt is right now.

Also, how European is a solution that still is backed by Visa and Mastercard?

I tried curve on a lineage phone in UK and couldn't get it to work. That was about 18months ago, and I didn't put huge effort in so I wouldnt call that definitive, but keep your expectations low
