But if you don’t accept cookies the next time you visit the site they won’t have record of you rejecting said cookies
Usually there's a carve-out in the rejection for "strictly necessary functional cookies" like logging in or remembering which options you chose in the cookie dialogue.
But they'd rather nag you every time hoping you eventually give in and accept
