They're not using the word believe as in having a religious belief. Their using it in the very common, normal usage in which saying "I don't believe X" is synonymous with saying "I don't believe in the accuracy of X."
Which, when faced with an absolute mountain of evidence, is still tantamount to "I don't believe it". You can say "I don't think that's accurate" but when the entire community of people responsible for checking accuracy tells you that it is accurate, that's not disbelief, that's denial in clown shoes.
I'm not saying they're not idiots, but very few people if any can be said to understand most medical realities other than the most simple completely, there are plenty of people in the world that don't understand germ theory who don't say that they don't believe it.
