And in the little leisure time I have, I take on massive projects to potentially make a living off, but it just burns me out even more

Leisure rhymes with pleasure, not with work
But the idea is to stop having to go do soul-draining work and replace that by doing something you can actually enjoy.
If you turn your hobbies into a job, they won't feel like hobbies anymore, and you'll only have work left.
Find a job you can tolerate and use it to fund the hobbies you love.
