That's how it works on paper, but in reality, 98% of the time the membrane holds the shell together, and there's no problem. The other two percent of the time, I just pick the eggshell out, easy-peasy. No one cracked their eggs this way until some TV cook showed it, and people who never cooked decided it was superior and different and good. People who've been cooking with eggs for decades don't bother with this, because it's a non-issue.

I used to do it on side of the bowl, then switched later, so have years of experience with both. I don’t remember where I learned it, but it definitely helps.
