I understand that GrapheneOS will not require age verification, but what if I'm using a Google account on it? Will I still be able to use my Google account for the Play store on a GrapheneOS phone? (In the US) Thanks in advance

The point of GrapheneOS is not to eliminate Google services. There are several options for that. What GrapheneOS is uniquely good at, is sandboxing Google services, so it doesn't have access to all the things you don't need it to.
