How does their roast beef have bubbles in it?

They were the first restaurant to offer Sparkling Beef on the menu back in the 80s, but they stopped marketing it when the Carbonated Meat fad had run it's course.

They continued to use gas impregnation on their meats when they discovered it allowed large piles of nutritive matter to cook more quickly and evenly, similarly to how the burger patties at Wendy's an and White Castle are partially perforated.
