Pineapple contains an enzyme called Bromelaine. It has proteolytic properties, means it has the ability to dissolve certain amino acid bonds, as in proteins. This is relevant If you want to mix (fresh!) pineapple with diary products, gelatine or meat. Diary will turn bitter, gelatine wont form a gel, and meat will first tenderize and eventually dissolve. Another use-case is cat food. In there, Bromelaine can help the cat dissolve hair balls in it's stomach. Papaya also has a similar enzyme called Papaine, and Kiwi contains the so called Actinidine with similar properties.
FUN FACT: The peel of the pineapple contains more or less the same amount of enzyme, so you can use that too If you want to dissolve your neighbors cat.
Have fun!
So if you buy a suspicious number of pineapples, do the police show up at your door asking if you're trying to dispose of a body?
Is that why there's pineapple in so many bbq sauces...
