Despite a few initial issues like screen flickering, and a persistent 1fps problem when winning a car, I would say RPCS3 has been easy to setup and the game looks decent upscaled to 4k.

I bought a red Toyota MR2 GT-S ‘97 ASAP and put some 18” 5 spoke wheels on it. I love this car.
The lack of a 20 minute unskippable intro video, not having someone ranting at me the whole time I try to play and a clear game loop with satisfying progression means GT6 easily dunks on modern games like GT7 and Forza Horizon 5.
Get car, tune car, race car, win car, do the licensing tests and then buy a new car and repeat for the next class. Fucking perfect!
Damn near all my favourite cars are included in the game so modern games offer little more than graphics and claims of a better driving simulation.
I find GT6s driving to be a near perfect mix of sim and arcade with enough options to tweak.

I don't have a wheel setup so I appreciate gamepad centric racers. I need to spin up GT6 on RPCS3. I just occasionally try GT Sport on shadps4 to see if it works. I at least own the first project cars on steam before it was delisted. The only current game I'm planning to buy on deep sale is automobilista 2
I’ll try to drop a little write up here on the steps I took to resolve some of the jank which might help others like yourself.
I always felt something was off with Project Cars and never purchased it. I might see if I can find a PS4 copy.
I recently and regretfully picked up The Crew Motorfest which I quickly refunded due to Ubisofts always online bullshit causing constant crashes on Linux.
I want to emulate Project Gotham Racing as well.
One thing that truly stands out to me is how much time GT7 wastes not just interrupting me with ‘normie’ explanations of cars history that I already know more about. It’s the animations that make it take forever to do anything.
GT6 on a PC with an SSD means anything you select is basically instant. I’m almost certain I could finish 5 races in GT6 before finishing 4 in GT7 just due to menu animations.

I presume you don't need an expensive PCIE 4 NVME SSD like PS5 that makes it hard to also expand storage to get those speeds either.
I only have NVME drives in my gaming PC currently but you could absolutely use a SATA drive without issue
Haven't played the ps4/XOne forza or GT games. Project Cars doesn't seem to wordy to me. Project Gotham Racing would be fun but Xenia has always been finicky for me though I've only ever tried on Linux
Forza Horizon is a good time if you aren't wanting realism, probably my favourite of the racing games. I'd consider it a successor to PGR due to the drifting.
