So I had to look it up, but Pokémon Stadium actually used an emulator to run the Gameboy games source 1 and source 2.

So while that method is probably Nintendo approved, I think it's probably easier (and more accurate emulation) to use a modern emulator.

so i should emulate Pokémon stadium to emulate gen 1 Pokémon to officially run it at 2x speed?

No, you should get a switch emulator and use Nintendo online to emulate Pokémon Stadium so you can emulate the Gen 1 games.

Although I suspect the switch N64 emulator doesn't support the Gameboy adapter.
