Oh, oh, Pug, we have a whole top-level category for this on Wikimedia Commons: https://commons.wikimedia.org/wiki/Category:Bird%27s_eye_view_maps (see also: https://commons.wikimedia.org/wiki/Category:Old_maps_by_geographical_area)
It gets pretty granular as you traverse down the tree. For the US specifically, the Library of Congress has a substantial collection of panoramic maps of towns (lots of them lithographs). Some might still not be on Commons; I remember I had to upload one when I had to use it.
