Does anyone have a good replacement for Google Maps? I feel like options like OpenStreetMap and Here We Go don't have many points of interest, especially in smaller cities. The ones that do exist are often not up to date. It's a tedious job updating POIs yourself
Have you tried comaps? Once you login to OSM via settings it's not too bad to edit places directly.

I do this all the time. The great thing is that you get your edits first, meaning you don't have to wait for them to be public before using them.
For travel, I've tried CoMaps and CityMapper and Magic Earth
I always end up coming back to CityMapper because its nicely made and does what I need best; which is public transport routes.
But it sounds like maybe you're looking for ALL THE OTHER STUFF; reviews, opening times, menus, etc. for local businesses?

As far as I am aware, open street maps is the most mature non corporate maps app, I think unfortunately at present you have to deal with its quirks or run apple or google maps.
All other non-us maps mentioned here are, afaik, based on openstreetmap. OpenStreetMap itself is a database rather than a useful googlemaps replacement for navigation etcetera. Apps like Mapy and CoMaps are more useful for day-to-day use.
A separate device by Garmin.
Not sure whether that is the right thing for your use-case, but mapy.com (Czech Republic) works extremely well for satellite view, their images often are of higher quality than those of Google.
EDIT: I also prefer heir simple no-bullshit UI.
