For basic notes, Markor + Syncthing works a treat. I've been using it for years, and never had any issues with it.
I recently switched back to Joplin Notes, largely because of its (upcoming) support for Rocketbook (and other smart notebooks, such as Bambook and Scribzee), and the self-hosted Joplin Server, which lets me offer accounts to friends and family, and share notebooks with them.
It works perfectly, and has the added benefit of E2EE, biometric support, plus the many, many advanced features Joplin offers. There are plenty of other sync options, including file system (for use with Syncthing) and Nextcloud.
all of that sounds great but seemingly above me. I essentially take notes in a text editor in markdown like syntax (typst), and for occasional sketches, i use xournalpp. if it is too media heavy, then xournalpp as whiteboard, ilude media in it, and can type and include math by typst. I do not do multiple devices so this 1 device is it
