Vegan food

Post the food you cook, or the recipes you love.
In the spirit of the chill vibes CPO ethos, some simple rules:

You don't need to be vegan to participate but if you go to the trouble of bringing it up, I'm not going to delete critical/mean comments.

No low effort content. OC such as memes are welcome, link spam is not. If you are linking a recipe at least let us know why you are sharing it. Do you like it? Is it something you've been meaning to try? Give us something!

Yeah, I use cocoa powder sometimes but not with this batch. It's tasty!
I got the TVP at a bulk food store, but it's widely available in grocery stores here. The bulk store is just cheaper! It might be hiding in the "ethnic" aisles if you are in the states or canada.
Personally I don't think lentils would be a good replacement for TVP but maybe diced mushrooms or walnuts for their slight spongy/chewy texture? Lentils are amazing tho. I'll probably make some daal or misir wat as an additional option for the trip.
The fun thing about dehydrating is you don't really need to worry about timing things with different cooking times. You could simply dehydrate the lentils separately instead of adding it to the main dish. You just need to up the seasoning to accound for the additional unseasoned mass.
