Originally was thinking about doing it through Discord, but after the recent age-verification fiasco and "real money gaming" (gambling) ads, I'm looking for alternatives.

Pick a server, create your space (they are literally called spaces) and create your rooms in there, done.

If the rooms are public, consider adding a moderation bot to be better equiped against spam too. Selfhosting Draupnir or Meowlnir is doable, but you can also employ https://asgard.chat/

If you intend to run a business around your game engine, consider paying for professional homeserver hosting. That will insulate you from administration hassles, and at least partially insulate your customers from slow performance when the public servers are overloaded.

I'm as non-profit as it gets, so at the moment I cannot, though later I plan to host mine.
