Tried quartzite in my geology class the other day, thought it had a very subtle flavor, would recommend!

This is why I like whiskey, it pairs well with all rocks.
Chalk is probably a copout answer but that's my pick! Limestone would be unpleasant but similar. I also feel like mica would have interesting mouthfeel.
I bet mica is like a crisp german strudel.
