On a similar note, some years, ahem decades, back I had come across a probiotic yeast called S. boulardii. It was a tad bit expensive, which got me thinking, “how do they make this stuff, anyway?” It’s yeast, and I know yeast love to grow on sugar. Thus was born probiotic hard cider. And there was much rejoicing!
