There's some things I would love for my Pixel Watch to do, but a VR controller isn't one of them. Let's start with being a Bluetooth beacon, being able to run Google Home routines or even being a speaker for Google Home routines.

You should already be able to run home routines through assistant actions, no?
Nope, can't run routines through your watch.
But assistant actions can do the same things, so the functionality is the same.
What are assistant actions? For example. I have a good night routine which turns off the lights, tells me about the weather tomorrow and any appointments I may have. Can assistant actions do that?
