Meanwhile south of the border I can't even find a way to sell mine from my modest 400 taps without getting 250k in liability insurance and finding a spot at a farmer's market a long ways away.

2025 I think canadian syrup was like 17 a quart, which is hard to compete with. You can't compete without a proper set up really, you need a vacume pump and lines, you get like multiples more sap, and get it delivered right to your sugar shack. Those guys have like 10k taps though, as do many down here. 250k reverse osmosis machines, super fancy boilers, pressure filters, and so forth. It takes a lot of money.
