Other than She-Ra, I think Mage and the Demon Queen, Please Bully Me Miss Viallainess, Shimeji Simulation, Superwomen in Love! Honey Trap and Rapid Rabbit, and The Executioner and Her Way of Life all fit the bill.
Gundam: The Witch From Mercury, too.
Amphibia and she ra and owl house are a bit like this too. Maybe Gideon the Ninth series will end that way once the 4th book comes out
