Her name is actually "San".

I can't quite remember if anyone besides goddess Moro ever called her by her name.
Her "title" as Mononoke (Hime) is more common and makes it easier for people less deep in the lore to recognize her.

I think Ashitaka calls her San.

Calls her princess of the wolves when he meets her, and then san the rest of the film. I don't think anyone called her Mononoke in the film.
