Like Google Docs, also with permissions for Owner, Editor and Viewer. I know making websites exist but I'm not sure if I could access buying any relevant hardware in my city and idk how to self-host.

I use Cryptpad as wel. Its been around quite a while and they have been expanding with an lot of new apps like kanban, drawings, code editors and presentations. All Foss and e2e encrypted.
