I'm not even vegetarian/vegan and we've switched to using tofu in place of cut-up chicken in a bunch of recipes. Not including environmental/ethical reasons:

it's cheaper
lasts longer in the fridge without having to worry if its gone bad
no salmonella worries
no worries about possible woody breast (silly name, I know)

It's also healthier for you if you eat less meat in favor of vegetables.
