Ye so the cheese I make by soaking 1/2 cup of cashews over night and blending them with 2 tbsp olive oil, 2 tbsp nooch, 2 tbsp tapioca flour, 2 tsps mushroom bullion, 2 tbsp apple cider vinegar and some salt to taste. The sauce I cooked some soy chorizo and dumped 4 small cans of tomato sauce pretty much. The filling I just cooked some soy meat w/veggies and the tortillas I got at a local bodega. I didn't wanna dry the tortillas so I just heated them up a bit filled them and placed them and covered them with sauce and finally the vegan cheese and baked them until the cheese got all firm.
I originally wanted to just make the filling with potatoes tbh but I had a packet of soy meat I wanted to use. Baking them was a smart choice I find doesn't compromise the flavor tho the vegan cheese ain't as gooey as I hope
