yeah but they're still whole cloves of garlic, even if you like garlic eating a whole clove of garlic is a lot of garlic, if you whipped them into a spread and like coated the crust then added the sauce you'd have just as much garlic without "wow I just put a whole clove of garlic in my mouth"
like I could throw whole roasted garlic cloves into my mashed potatoes too but it's 100x better to process them into a paste and evenly distribute them
