Some of the best trained soldiers in the galaxy, sent after the biggest security breach of the war, stationed at the most important military asset in the Empire, can't hit a naive basically untrained 19 year old kid and his sister to save their damn life

A common interpretation is that it's a deliberate strategy by Tarkin to let them escape and then track them. Leia even says it out loud in the film: "They let us go. It was the only reason for the ease of our escape."

The Stormtroopers were sent by Vader, to recover the droids. Leia was referring to the escape of the ~~Ebon Hawk~~ Millennium Falcon from the Deathstar.
