I know that many have already asked these types of things here, however I am still somewhat confused about what I saw.

Download Chromite from F-droid.

But I saw that there were others like Bromite, Mulch etc.

Which one should I choose to stay away from Google?

I can suggest several browsers: Brave for social media accounts, Firefox-based browsers such as Ironfox and Fennec for searching information, so that you can manage different scripts, which Brave on your phone cannot do.
