The Sony XM4/XM5/XM6, Sennheiser Momentum 4, and Bose qc35/qc45 are all good options. If your phone supports LDAC then go with the Sonys, it's higher quality streaming than aac or aptX.

iPhone 16 pro? Would be using it with 2023 iPad Pro and M1 MacBook Pro too though

You're stuck with aac then. Any of those options will work well, the real test will be how they fit.
