No they are neither fungi, plant or animal. They are single celled organisms so more closely related to amoeba or some algae.
Protists, they are protists. And algae is firmly in the plant branch.

Yes. The literal translation is “health”, which is also awkward. But in US English, this is a common response to a sneeze, basically the equivalent of “bless you” which is also a response to a sneeze.

I've only seen mushrooms like this in sci-fi. They're usually bigger tho.
When I was a kid we would go hiking in a creek bed that ran inbetween all the houses. One day I came upon some little bulbous mushrooms like this that were growing out of a huge downed tree. When you poked one super gently with a stick, it would explode a cloud of green spores out of it. Weirdest shit I ever found, and I never saw them again. I would have sworn it was like the flood from halo or something
